Demand control kitchen ventilation means air volume is adjusted automatically according to what the kitchen needs. When load increases, ventilation is increased. When load decreases, air volume is reduced. This is known as Demand Control Kitchen Ventilation (DCKV).
Why is demand control used?
Commercial kitchen ventilation is sized for peak cooking load. Kitchen load still changes during the day. The same air volume is therefore not needed for the whole operating period.
How does demand control work?
The system monitors conditions in the kitchen and changes ventilation control automatically. The kitchen’s designed ventilation capacity remains available when it is needed.
How is demand control different from timer control?
Timer control is based on preset times that building maintenance sets according to an estimate of the need for ventilation over the week. Demand control is based on the kitchen’s actual situation and adjusts ventilation in real time, automatically, as needed.
Why does demand control save energy?
When air is not removed from the kitchen unnecessarily, less make-up air is needed. Less energy is then used to heat and cool supply air, and fan electricity consumption falls.
